Bucatini is a thick, spaghetti-like pasta with a hole running through the middle. The name comes from the Italian word 'buco', meaning hole. Although the bucatini shape originally comes from Sicily, the most famous story surrounding bucatini is linked to the celebrated Bucatini all'Amatriciana recipe. The pasta is shaped using bronze dies and dried over 22 hours at temperatures between a minimum of 36°C and a maximum of 55°C. Its rough, porous surface allows sauces and other ingredients to cling and be absorbed beautifully.
